Admiral Maltings is California’s first new barley malting operation of the modern era. We employ the age-old art of traditional floor malting to turn sustainably grown grain from California farmers into quality malt.

Materials & Ingredients
We work with NorCal farmers to grow malting varieties of barley and other grain to meet certain quality standards necessary for making great malt. One variety was recently developed at UC Davis to perform best under typical NorCal growing conditions. All of our grain is grown sustainably, some organically and the rest using the no-till farming method (and the no-till barley is also dry-farmed). No-till farming is a form of regenerative agriculture that fosters healthy, nutrient-rich soil, sequesters water (reducing need for irrigation) and also acts as a carbon sink that can sequester carbon dioxide from the atmosphere. Additionally, small grains such as barley are excellent low-water crops ideally suited for California’s recent drought conditions.
Packaging & Delivery
We pack our malt in paper bags rather than the more common poly/plastic bags.
We strive to get the freshest malt into the hands of brewers and distillers so we maintain very low inventories and rarely have to dispose of malt that’s past its best-by date.
Local Supply Chains
We only work with farmers in Northern California. Our mission is to provide brewers and distillers with California grown, locally malted grain. We don’t source any grain from outside of California and most of it is grown within 100 miles of our Alameda malt house. And then we become part of the local supply chain—before Admiral, it was not possible for Bay Area brewers to produce beer with California-grown, locally malted grain in the modern craft beer era. Most malt comes from the upper Midwest, Canada or Europe. We save the rootlets and small kernels that don’t meet our sizing requirements and give them to a farmer to use as animal feed.
Goals & Aspirations
When we built the facility, we installed a state of the art water recycling system to enable reuse of water that’s used to steep the grain. It has proven challenging to get it working the way it needs to but we continue to pursue it as a goal and hope to have it online sooner rather than later.

We have CCOF certification to allow us to produce and sell certified organic malt.
